Description The shotgun metagenomic sequencing data of raw materials and community-level bioaugmented MT-Daqu microorganisms. Including 1 wheat sample, 2 inocula samples (fermented and mature MT-Daqu, named FerDq and MatDq, respectively), and 60 MT-Daqu samples collected from 5 groups on days 0, 1, 2, 4, 6, 8, 10, 12, 17, 22, 27, and 32 during fermentation.
