Description Sorghum used for brewing baijiu, a unique and traditional distilled liquor, has a long history in China.These baijiu-brewing sorghums are usually waxy and tannin-containing, and exhibit distinct phynotypes from the reference genome inbred BTx623. Little is known about the genome of these landraces.Here we present the complete telomere-to-telomere genome assemblies, well-annotated genes and raw reads of the representative Chinese baijiu-brewing sorghum cultivars Hongyinzi for Moutai liquor from Guizhou and Huandiaonuo from Zhejiang.
