描述信息 To investigate why lactic acid bacteria dominate in anaerobic pit fermentation, a multi-omics analysis was carried out on community changes and the tolerance characteristics of dominant lactic acid bacteria during the fermentation process. This project aimed to elucidate the significant role of lactic acid bacteria in the brewing process, achieve its rational regulation, and provide valuable insights for studying core species in other fermentation systems.
