Title A metabolomics project for sweet rice wine
Description This study focuses on a metabolomics analysis project involving Gastrodia elata sweet rice wine (GSRW) and traditional sweet rice wine (TSRW). By employing non-targeted metabolomics technology (LC-MS/MS), a total of 3758 metabolites were quantitatively detected at distinct fermentation time points, namely 0h, 20h, 40h, 60h, and 72h.
